Ancho Chile/Pobalno

A mild chili pepper originating in the state of Puebla, Mexico.  Dried it is called an ancho chile.  The ripened red poblano is significantly hotter and more flavorful than the less ripe, green poblano.  Ancho chiles are wide.

Handling and Storage 
Choose whole, unbroken chilies with deep color and a fresh scent.  Store dried ancho chilies in an airtight container in a cool, dry, dark place for up to six months.  Store poblanos in the refrigerator for up to a week.
 
Varieties 
Ancho – sweetest of the dried chilies, essential ingredient in sauces and moles.
