Artichoke

An artichoke is actually the bud of an edible flower.  Artichokes resemble a pinecone.  The center can be eaten (known as the heart) as well as can the leaves.

California (Salinas Valley and Monterey)
 
Handling and Storage
Sprinkle with water in a plastic bag and keep in the refrigerator for up to one week.  Artichokes should feel heavy and “squeak” when squeezed.  Void artichokes that are brown at the tips, it means they are older and have become dried out.
 
Varieties  
Over 40 commercial varieties exist.  The most common varieties include: Green; Purple; Spined.
