Handling and Storage  
Cabbage should be large, compact, and heavy for their size, with tender green leaves showing no evidence of damage or insect nibbles.  Check the bottom of the cabbage to be sure the leaves are not beginning to separate from the stem, an indication of age.  Store whole head cabbage in a plastic bag in the refrigerator for up to a week.  Cooked cabbage can be refrigerated in a covered container for up to four days.
 
Varieties
Flat; Napa; Red – smooth red leaves, often used for pickling/stewing; Savoy – Crimpled, curly leaves, mild flavor and tender texture.
