Celery

Celery

From the same plant family as carrots, parsley, and fennel.  Pascal celery is the most common type in the United States.  Pascal celery is larger than most other celery types, with firm, solid stalks and leafy ends.  Celery comes in a variety of colors from sheer white to vibrant gold to rich red and deep green.  There are two types of celery: celeriac (root celery) – characterized by a large root ball, which is prized for its unqiue nut-like taste, the second type is leafy celery – looks very similar to  parsley, but not in taste.  Celery is often a main plate vegetable rather than salad or soup additions.

Handling and Storage
Choose leafy celery that looks crisp and snaps easily when pulled apart.  It should be relatively tight and compact and not have stalks that splay out.  Keep celery in a plastic bag in the refrigerator for five-seven days.
