Chayote

Chayote

An edible plant belonging to the gourd family. Chayote is eaten like a potato or other root vegetable. Chayote is most commonly consumed cooked. They are very popular in Latin American cuisine. They are roughly pear shaped, somewhat flattened and with coarse wrinkles. They have a thin, green skin fused with a green-to-whitish flesh, and a single, large, flattened pit. Some chayote is spiny. They have a somewhat bland flavor with the texture being described as a cross between a potato and a cucumber.

Mexico, Brazil, Costa Rica
 
Handling and Storage 
Choose chayotes that are heavy for their size. Refrigerate for up to one week. They should be stored in a cool dry environment.
