These peppers are used to flavor many different dishes and cuisines worldwide and are often used in hot sauces and condiments. The scotch bonnet has a sweeter flavor and stouter shape than its cousin, the habanero, that it is often times confused with. It gives jerk dishes their unique flavor.

Fresh, ripe scotch bonnets change from green to colors ranging from yellow to scarlet red. Ripe peppers are prepared for cooking by cutting out the weeds inside, which can be saved for cultivation or other culinary uses.
