Watermelon

Watermelon

Loosely considered a melon, although they are not officially a part of the melon genus.  They have smooth exterior rinds (green, yellow and sometimes white) and they have a juicy, sweet interior flesh (usually deep red to pink, but sometimes orange and yellow if unripe).  Their make-up consists of 92% water and 8% sugar.

Handling and Storage  
Look for a firm, symmetrical watermelon that is free from bruises, cuts, or dents.  Watermelons should be heavy for their size.  The underside of the melon should have a creamy yellow spot from where it sat on the ground and ripened in the sun.  Watermelons can be stored at room temperature for about a week.  After cutting, watermelon can be stored in the refrigerator for 3-4 days.
