Arugula looks like a longer-leaved and open lettuce. It is consumed raw, in salads, or as a garnish. It is rich in Vitamin C and in Potassium. It has a slightly bitter, rich, pungent, peppery taste. Arugula is part of the Cabbage family. The smaller, younger leaves, are often the mildest tasting.
Handling and Storage
Arugula is sold in bunches with roots attached or in loose bins. Look for fresh, bright green leaves. Store fresh arugula wrapped tightly in a plastic bag and store in the refrigerator for no longer than two days. Wash thoroughly before using.
