Fleshy spears topped with bud-like compact heads.  They are prized for their succulent taste and tender texture.  They are harvested in the spring when they are 6-8” tall.

Handling and Storage  
Look for rounded stalks, neither fat nor twisted.  Look for firm, thin stems with deep green or purplish tightly closed tips.  Use asparagus within a day or two.  Store in the refrigerator with the ends wrapped in a wet paper towel.  Wash and cook whole.
