The national dish of Puerto Rico.  A type of legume that contains high levels of protein and amino acids.  Gandules have a firm texture and nut-like flavor.  They are harvested from a mature plant when young and ripe and are shelled from the pod leaving the green round or oval seed.

Handling and Storage 
Dry gandules can be stored in your pantry cabinet in an airtight container.  Once cooked they can be stored in the refrigerator in an airtight container for a few days.  They can also be frozen for an extensive period of time.
