A type of winter squash. It has hard, knobbly-looking skin, shaped like a squat pumpkin and has a dull-finished, deep green skin with some white stripes and an intense yellow-orange color on the inside. Similar to a buttercup squash.
Handling and Storage
Choose squash that have a hard, deep-colored rind free of blemishes or moldy spots. Store kabocha squash in a cool, preferably dark, well-ventilated area for up to one month.
