See Chicory. A variety of leaf chicory. It is grown as a leaf vegetable which usually has white-veined red leaves. It has a bitter and spicy taste, which mellows when it is grilled or roasted.
Handling and Storage
Look for bright maroon/red/purple leaves that are fresh, young, moist, and tender. Leaves that are injured, torn, dried, limp, or yellowed indicate poor quality. Store unwashed in the coldest part of the refrigerator for no more than 2-3 days.
