A root vegetable with brown skin, yellow flesh and a very strong starchy taste.  Used most commonly in the preparation of heavy soups.  Apios are a popular Latin staple.  Apio can be used as a substitute for potatoes.  They cannot be eaten raw.  They are often times fried into chips or made into biscuits or flour.
