A citrus fruit.  Key Limes are yellow when ripe but are picked green commercially.  They are tart and bitter in flavor.  They are generally the size of a ping pong ball.  They are close relatives of the Lemon.

Growing Area
From Florida – June – August. From Mexico year round.
Handling and Storage 
Look for Key Limes with skin that is light yellow and fine grained, like leather.  Avoid any with signs of decay, mold, or blotchy, brown spots.  Do not buy if the skin is turning hard or shriveled.  Store in the refrigerator for up to two weeks.
