Handling and Storage 
Look for firm and straight leeks with dark green leaves and white necks. Try to purchase leeks that are of a similar size so as to ensure more consistent cooking. Fresh leeks should be stored unwashed and untrimmed in the refrigerator where they will keep for one to two weeks.
